Produced from red grapes of the Piana Rotaliana to which it owes its name, it offers the perfect pairing for the many typical recipes of the area based on red meats as well as for local cold cuts and aged cheeses. Its full bodied and enveloping flavour is a welcome addition to braised or stewed sauces and for a creamy risotto, giving it a beautiful burgundy colour.
